Step 1
Add milk, sugar and yeast to the mixing bowl and warm up 2 Min./37°C/Speed 2.

If you don’t have a Thermomix, place ingredients into a saucepan and warm up until it is lukewarm.

Add butter in small chunks, flour, egg and salt (in this order!) and knead until smooth on setting 2 Min./ .

If you don’t have a Thermomix, place the milk-yeast mixture in a large mixing bowl. Add the butter in small chunks, add flour, egg and salt (in this order!) and knead until smooth. This process might take up to 10 minutes depending on your flour consistency and butter temperature.
Step 5
Cover the dough and leave to rise for 1-2 hours until doubled in size. Once risen, take the dough out of the bowl and place it onto a floured surface.
Step 6
Preheat the oven to 190°C.

In the meantime, in a small bowl mix together the cinnamon, caster sugar and brown sugar.
Step 8
Roll out the dough to a large rectangle. Smear the butter all over the rectangle. Scatter over the cinnamon sugar mixture and softly press it in with a rolling pin. Roll up to a long tube. Cut the tube in half, lengthways. Overlap the two strands until you have a long braided rope. Tuck in the ends underneath and place into a 2 pound loaf tin lined with greaseproof paper. Leave to rest under a tea towel for another 10 minutes.
Step 9
Bake in the oven for 45 minutes until golden brown. Remove from the oven and leave to cool down. Enjoy!
