Step 1

Preheat the oven to 180°C.

Step 2

Place the almonds, cashew nuts and pecan nuts in the Thermomix mixing bowl and chop roughly on setting 2 Sec./ Speed Remove and place into a large bowl. Next, chop the apricots on setting 2 Sec./ Speed Tip into the bowl as well. Add all the remaining ingredients and mix well until everything is incorporated.

Step 3

If you don't have a Thermomix, roughly chop the above nuts. Place in a large bowl. Chop the apricots and also tip into the bowl. Add all the remaining ingredients and mix until well incorporated.

Step 4

Place on one or two baking trays lined with greaseproof paper. Spread out evenly and don't pile it up too high. You would rather use two trays if it feels too full. Roast in the oven for 20 minutes, stirring the granola every 5 minutes to ensure they don't catch. Remove from the oven and leave to cool down. Don't worry, the granola will harden once removed from the oven. Enjoy with yogurt, milk or anything else that takes your fancy!
