Step 1
Preheat the oven to 180°C.
Step 2
Grease a bundt cake tin or a 26cm round cake tin with butter and sit with flour throughly.
Step 3
Place the butter (200g), flour (300g), eggs (4), whole milk (20g), caster sugar (200g), salt (1 pinch), baking powder (1 Tbsp) and vanilla extract (1/2 tsp) in the mixing bowl. Combine 1 Min. / Speed 3.5.
Step 4
If you don't have a Thermomix, place the ingredients in a large mixing bowl and, using an electric whisker, combine until you have a smooth batter.
Step 5
Pour in the prepared tin and bake in the oven for 60 minutes. Test after 50 minutes with a wooden skewer, whether the mixture is baked.
Step 6
Remove from the oven and leave to rest for 10 minutes in the tin. Then remove from the tin and leave to cool completely on a wired rack.
Step 7
To make the lemon icing, squeeze the juice of half a lemon in a small bowl and add the icing sugar. Stir well to combine. If the mixture is really stiff, add a bit more lemon juice, bit by bit, because you don’t want it to get too runny. It should have the consistency of thick custard.
Step 8
Pour over the cake and enjoy!
