Line a plate or dish with parchment paper and set aside

In a large mixing bowl, combine the oats, almond butter, maple syrup and vanilla (if using) until combined

Fold through the chocolate chips (if using)
Step 4
Using your hands, form the mixture into 10 to 12 balls and place them on the lined plate
Step 5
Refrigerate for at least 1 hour to firm up

Store, covered, in fridge
