Step 1
Preheat the oven to 350F (180C). Line a large baking sheet with parchment paper.
Step 2
In a medium bowl, whisk the tiger ut flour, tapioca flour, coconut sugar, ginger, cinnamon, salt, and cloves until blended.

Add the oil and water to the bowl, stirring until completley blended into.a dough.

Divide the dough into 10 equal portions and roll each into a ball (about 1 inch/2.5 cm each).

Place the dough balls on the prepared baking sheet, spacing 2 inches apart. Flatten (with fingers, spatula, or flat-bottom-glass) until the cookie dough balls are about 2 inch (5 cm) in diameter.
Step 6
Bake the cookies in the preheated oven for 8 to 9 minutes until deep golden brown and the surface of the cookies appears dry.
Step 7
Remove from oven and cool 1 minute on the baking sheet. Transfer cookies to a cooling rack and cool completely.
