Preparation Cut an opening down the middle of each dates and separate enough to fill but careful to keep the date intact. In a bowl, combine the mascarpone cheese and honey and whisk together. Add the mascarpone mixture to a piping bag (tip choice is preference, just nothing to big). If you don’t have a piping bag you can also just spoon the mixture into the dates. Pipe or spoon mixture into dates. In a small bowl, combine cocoa powder and espresso powder and using a small sifter, sift mixture over top of stuffed dates. Store in fridge in an air-tight container and remove to enjoy!
