Step 1

Preheat oven to 400°F. Brush one side of each bread slice with olive oil. Arrange on a large baking sheet. Bake for 8 to 10 minutes or until toasted. (Or, grill slices on the rack of a covered grill directly over medium heat for 1 to 2 minutes per side.)

Step 2

In a large bowl stir together the eggs, shallot, capers, parsley, chives, lemon juice, mustard, 2 tablespoons olive oil, salt, and pepper to taste. Serve on top of toasted bread slices and garnish with additional shallot and parsley.
