Step 1
In a bowl, mix together chili paste, fish sauce, fresh lime juice, and sugar.
Step 2
Crush galangal, lemongrass, and garlic in a mortar until it forms a paste.
Step 3
Heat oil in a wok over high heat. Add the mixture from step 1, sliced chilies, and kaffir lime leaves. Stir-fry for about 20 seconds, or until the mixture becomes aromatic.
Step 4
Add shrimp to the wok and cook for 1–2 minutes, or until they are cooked through.
Step 5
Push everything to one side of the pan. Crack the eggs into the empty space and scramble them. Then, mix the eggs with the rest of the ingredients.
Step 6
Add rice and stir-fry thoroughly.
Step 7
Add the remaining ingredients and continue to stir-fry until each rice grain is coated with sauce. Serve immediately.
