Step 1

1 Place a small skillet, with a tight-fitting lid, over medium-high heat

Step 2

2 Once the skillet is hot, add the bacon and fry until crisp, 3 or 4 minutes

3 (If you prefer to use olive oil instead of bacon, heat it in the skillet until it shimmers

Step 4

4 ) Sprinkle in the smoked paprika, then stir in the shallot or onion and the garlic

5 Cook, stirring frequently, until the shallot or onion has softened and is starting to brown, about 4 minutes

6 Add the green beans and toss to incorporate, then add the tomatoes and their juices

7 Add water as needed so the beans are barely covered

8 Top with the potatoes

9 Let the mixture come to a boil, then reduce the heat until the mixture is barely bubbling around the edges

10 Cover and cook until the potatoes are tender and the green beans will be very soft, with no trace of crispness, about 30 minutes, stirring a few times and adding water as needed

11 Season with salt to taste

12 Stir in the honey and serve
