Modifications—I only had 2 oz of feta so I added 2 oz of freshly grated parmesan. And it was great in the background of the feta chunks and olives. I was surprised at how far so little feta went since I like these types of cheeses in abundance. I did not add tomatoes because I did not have them.
The only mistake I made was adding two more tablespoons of olive oil from my olives. It was not as dry as I initially thought; I should have just let it soak up flavor. Fresh parsley from my garden gave it a good herb kick. If you are not use to fresh herbs, this can be overpowering. I was a little skeptical about the lime juice and thought it might really throw the flavors of the fresh veggies and parmesan couscous off, but it did the exact opposite.
