Step 1
Preheat the oven to 400 degrees. Prepare a baking sheet by lining it with parchment paper, then set it aside.
Step 2
Cut the puff pastry into squares after placing it on a clean work surface to work with. After giving each square a quick coat of egg wash, stack them one on top of the other to make 16–18 stacks, with each stack containing 2 pastry squares. Egg wash can be used in place of the wash.
Step 3
Place on the prepared sheet with a distance of about 2 inches between each one, and bake for about 13 to 15 minutes, or until puffed and golden. (Be sure to follow the instructions on the puff pastry package).
Step 4
Take the baking sheet out of the oven and place a piece of brie cheese on top of each of the puffed squares. Place back in the oven and continue baking for about 3 minutes, or until the cheese has melted. (Keep a close eye on your pastry; it might be ready in just a few minutes)
Step 5
Mini brie bites should be placed on a serving platter, and each should be topped with a small spoonful of cranberry-orange relish and a small sprig of thyme for garnish. Prepare and serve at once.
