Arrange a rack in the middle of the oven and heat the oven to 350ºF.

Heat 2 tablespoons olive oil in a 12-inch cast iron or oven-safe nonstick skillet over medium heat until shimmering. Transfer the skillet to the oven and bake until the eggs are fully set, 15 to 18 minutes. Let cool in the pan for 5 minutes before cutting into wedges and serving.
