Lightly flour a cutting board and roll out the puff pastry sheets until they are two even rectangles.

Spread mustard out over both pieces of the puff pastry.

Roll into a log and slice into 1" slices using a bread knife.
Step 6
Lay out onto a parchment-lined baking sheet. Leave some space between each pinwheel.

Cook in the Traeger for 15 minutes.

Brush the egg wash onto the rounds, and continue baking for another 5-10 minutes, or until the puffs are golden brown.
