Fried Green Tomatoes
Yes, you can use red tomatoes for this recipe, too—but then it’s not “fried green tomatoes!” Serve these on a platter with a glass of iced tea while munching and sipping on your porch on a sweet summer night. This is a great way to use your Green Beefsteak tomatoes!

4 large Green Beefsteak tomatoes
2 eggs
1/2 cup whole milk
1 cup all-purpose flour
1/2 cup cornmeal
1/2 cup bread crumbs
2 teaspoons coarse kosher salt
1 quart canola oil for frying
Instructions
Slice tomatoes ½-inch thick and discard the ends.
Whisk eggs and milk together in a medium-sized bowl.
Spread flour out on a large plate.
Mix cornmeal, bread crumbs, salt, and pepper on another large plate.
Dip tomato slices into flour to coat.
Then, dip tomato slices into milk and egg mixture; dredge in cornmeal and bread-crumbs mixture to complete coat.
Heat ½-inch of canola oil in a large cast-iron skillet over medium heat.
Place breaded tomato slices in skillet in batches of 4 or 5. Don’t crowd the tomatoes; they should not be touching each other.
When slices are brown, flip and brown other side.
When done, remove and drain on paper towels.
Notes
Serve these with a classic cajun remoulade, which you can make easily by combining 1 cup of mayo with: 2 tbsp Creole mustard, 1 tbsp horseradish, 1 tsp garlic powder, 1 tsp Worcestershire sauce, 1 tsp lemon juice, 1/2 tsp Cajun seasoning, 1/2 tsp smoked paprika.

Easy Capellini with Basil and Tomatoes

1/2 cup extra virgin olive oil, plus 2 tablespoons for the pot
6 garlic cloves, minced
4 pints cherry or grape tomatoes
20 large, fresh basil leaves, sliced julienne style
2 tablespoons chopped fresh parsley
2 teaspoons chopped fresh thyme leaves
1 teaspoon freshly ground black pepper
1/2 teaspoon crushed red pepper flakes
3/4 pound dry capellini (angel hair pasta)
1 1/2 cups freshly grated Parmesan cheese
Extra chopped fresh basil and grated Parmesan, for serving
Instructions
Boil a large pot of water with 2 tablespoons salt and 2 tablespoons of olive oil.
While pot of water is heating up, use a large sauté pan to heat 1/2 cup olive oil.
Add garlic to sauté pan and cook over medium heat for just 30 seconds.
Add tomatoes, basil, parsley, thyme, 2 teaspoons salt, black pepper, and red pepper flakes.
Reduce heat to medium-low and cook 5 to 7minutes, tossing occasionally to soften tomatoes and slightly char them.
While tomatoes are cooking, add capellini to pot and cook for at least 4 minutes in boiling water.
Drain past, and reserve 1 cup of pasta water—set aside.
Place cooked pasta in a large serving bowl, add tomato mixture and Parmesan—toss well with tongs or a large pasta fork.
Add some reserved pasta water to keep pasta from being too dry, if necessary.
Serve in large bowls with extra fresh-chopped basil on top, a drizzle of olive oil (consider using a garlic- or basil-infused flavored olive oil), and extra grated Parmesan cheese on the side.
Notes
It’s a meal all by itself—or you can serve a smaller portion with a side of green vegetables (think asparagus or spinach) for a healthful and delicious dinner.

Blueberry Chicken
Blueberries and chicken? Unusual, perhaps, but it’s a classic and beloved combination from the South of France that you just have to try! This romantic dish serves two and lends itself well to a bit of fancying up by turning the thighs into chicken lollipops. Try it for your next date night!

6 chicken legs (alternatively, just thighs or drumsticks)
12 ounces blueberries
1/2 cup honey
2 tablespoons lemon juice
12 ounces dark Russian salad dressing
1 package dry onion soup mix
Instructions
Wash and place blueberries in a large saucepan with the honey and lemon juice.
Crush the blueberries with the back of a fork or potato masher, and bring to a boil over medium-high heat, stirring frequently.
Skim off any foam that rises to the top. When the mixture just starts to thicken, remove from heat. Let cool slightly, until mixture easily coats the back of a spoon.
Add dry onion soup mix and Russian dressing, stir until combined.
Preheat broiler to low.
Pat chicken dry and prepare for oven.
Place on baking sheet lined with foil or in a baking pan/dish that is broiler safe, and pour blueberry mixture over top.
Place chicken under broiler and spoon over mixture every few minutes, turning chicken 1/4 turn at the same time to ensure even cooking. Any exposed chicken skin should be lightly golden and the blueberry mixture should thicken and caramelize further.
Serve hot over rice or whipped potatoes!

2 pounds chicken pieces, bone-in and skin on
2 tablespoons olive oil
1 tablespoon unsalted butter
3 tablespoons white wine
1 tablespoon fresh thyme leaves
40 cloves of garlic, peeled (about three heads of garlic)
Salt and pepper
Instructions
Preheat oven to 350 degrees F.
Use paper towels to pat chicken dry.
Heat oil and butter in an oven-proof skillet or Dutch oven.
Season chicken pieces with salt and pepper and brown them on all sides. Remove chicken pieces from pan.
Add the wine and use a wooden spoon to scrape the bottom of the pan (known as deglazing the pan).
Place the chicken back in the pan, add the garlic cloves, thyme, and the remaining oil.
Cover the pan and bake for 1 1/2 hours.
Remove pan from oven and let chicken rest for 10 minutes before serving.

Summer Squash Soup Recipe
A touch of real maple syrup, combined with slowly caramelized onions and the bite of Granny Smith apples makes this summer squash soup recipe one you’ll be making for years with the bounty from your garden!

2 cups chopped spring onion bulb, and 2 tbsp chopped greens
5 tbsp butter, divided
4 medium 6-8” yellow summer squash
3 cloves garlic
1/2 tsp salt
1/16 tsp or 4 cranks fresh ground pepper
1 cup broth, divided
1/4 cup heavy whipping cream
1/2 cup real maple syrup
1/4 cup granny smith apple, peeled, finely diced
Instructions
Wash and chop spring onion (about 2 cups), set aside, finely slice greens (2 tbsp).
Melt 4 tbsp butter over medium heat in a medium saucepan. Once melted, add onions and cook for five minutes to start caramelizing. Add a teaspoon of water, mix, and continue to do this for 10-15 more minutes, adding a tbsp water each time the water dries up, to keep them moist. Do this until the onions become a medium brown from caramelization (not from burning — don’t burn the onions!).
In the meantime, roughly chop your squash into small bite-sized pieces and mince your garlic, ideally with a zester or other fine grater. The squash will come to about 6 heaping cups after chopping. Peel and chop a quarter of your granny smith apple into small 1/8” squares (quite small!).
Once onions are soft and medium brown, add remaining 1 tbsp butter, melt, mix, then add minced garlic, salt and pepper, and stir again. After 30 seconds when garlic becomes fragrant, add chopped squash and 1/2 cup broth raising heat to a medium-high simmer uncovered, about 10 minutes.
Once all the squash is soft, turn off heat and use an immersion blender to blend while in the pot, then add remaining 1/2 cup broth, heavy whipping cream, real maple syrup and ground pepper, and use the immersion blender again until totally smooth. Add more broth or maple syrup as needed to get the consistency you like. Taste, add more salt/pepper as needed.
To plate, divide your apple bits into the bottom of four empty soup bowls, then pour soup into each bowl. Drizzle with maple syrup and garnish with spring onion greens. Enjoy!

3 small onions (2-3″ diameter) sliced into strips (I like to make them big so picky eaters can remove them)
Two handfuls of cherry tomatoes whole
3 bell peppers, cored and sliced into strips
16 oz jar of tomato sauce ( I suggest our Roasted Tomato Sauce!)
3 basil leaves
1 tsp red pepper flakes
Salt & Pepper to taste
Optional: Prepared pasta or rice
Instructions
Toss everything in a slow cooker and cook for 8 hours on low.
Use a fork to tear the chicken, and serve alone, or over-prepared pasta or rice.

Roasted Beet, Peach, and Goat Cheese Salad
This salad is a bit of work, but it’s so delicious and always impresses guests. Mache can be hard to find, so you may omit it and just use arugula, but it adds a great nutty flavor if you can find it.

2 beets, scrubbed
1 bunch mache (lamb’s lettuce), rinsed and dried
1 bunch arugula, rinsed and dried
2 fresh peaches – peeled, pitted, and sliced
2 shallots, chopped
1/4 cup pistachio nuts, chopped
1 (4-ounce) package goat cheese, crumbled
1/4 cup walnut oil
2 tablespoons balsamic vinegar
1 pinch salt and pepper to taste
Instructions
Preheat oven to 375 degrees F (190 degrees C).
Wrap each beet in two layers of aluminum foil, and place onto a baking sheet.
Bake in the preheated oven until the beets are tender, about 1 hour and 20 minutes.
Allow the beets to cool slightly, then remove the skins.
Let the beets cool to room temperature or refrigerate until cold. Once cooled, thinly slice the beets.
Place the mache and arugula into a large mixing bowl.
Add the sliced beets and peaches; sprinkle with the shallots, pistachios, and goat cheese.
In a separate bowl, whisk together the walnut oil, balsamic vinegar, salt, and pepper until emulsified.
Pour over the salad mixture.
Toss well and serve.

Easy Chicken and Corn Skillet Recipe
This chicken and corn skillet recipe is a simple one-pot dish that simmers in bacon fat to caramelize the corn, with a rich cream sauce.

8 oz uncured thick-cut bacon
2 lbs or 8 boneless, skinless chicken thighs
1 tbsp herbs, chopped (thyme, basil, or rosemary)
1 medium onion, chopped
1/2 cup chicken broth + more as needed
5 corn cobs, kernels removed with a knife
1/4 cup heavy cream (could substitute light cream for a lower-fat option)
1/2 cup shredded parmesan cheese
Salt & pepper to taste
Instructions
In a large skillet over medium-high heat, add bacon. You can chop it to fit the skillet more easily, or crumble it later. When crispy, remove and set aside, leaving the bacon grease.
Add chicken to skillet, and reduce heat to medium. Top with herbs, plus a sprinkle of salt and pepper over the chicken.
Brown the chicken for about 4-5 minutes on each side, then set aside.
Add the onion (add 1tbsp more oil if needed) for a few minutes until transparent, then add chicken broth and when it gets hot, use a spatula to scrape the bottom of the skillet. Add the corn and chicken, reduce heat to low, and let simmer for 10 minutes.
Add heavy cream and parmesan cheese to thicken (add more to make it more cheesy), and mix. Add crumbled bacon to the top with salt and pepper to taste, then enjoy!

Quick Pickled Cucumbers (Refrigerator Pickles)

When your cucumber harvest comes in strong, it’s time to pickle! This technique is quick and easy and makes a terrific hostess gift when visiting friends by the beach or at a late summer barbecue. Best of all, you can include any other extras from the garden, including peppers and cherry tomatoes.

Ingredients
Scale

1 cup water
1/3 cup white vinegar
2 teaspoons sugar, more or less to taste (optional)
1 to 2 teaspoons salt
2 cups sliced cucumbers (slim cucumbers work best)
1/2 cup sliced onion or green onion (optional)
1 small garlic clove, whole
Additional garden vegetables if desired (whole cherry tomatoes, bell pepper strips, etc.)
Instructions
In a small bowl, combine the water, white vinegar, sugar, and salt. Adjust flavors to taste.
Place the cucumbers, garlic, and optional vegetables in a bowl big enough to hold them and the brine.
Pour the brine over the vegetables to cover. If the vegetables aren’t all submerged, remove some of them or make more brine.
Cover and refrigerate overnight for full flavor. Keep refrigerated.
If desired, place the pickle mixture in clean canning jars and keep refrigerated. (If giving as a gift, have them put the jar in the fridge when you arrive. )
Notes
The pickles will keep in the fridge for week. After that, they’ll be edible, but not as crispy. They usually get eaten up before that, though!
