Step 1

Preheat the oven to 220°C, gas mark Ona lightly floured surface, unroll 1 pack of pastry,then spread the mustard over it and scatter thecheeses on top, leaving a 2cm border aroundthe edge.

Step 2

Top with the other sheet of unrolled pastry,then roll together with a rolling pin to gentlyseal. Brush the top with the beaten egg.

Step 3

Cut into 16 strips from 1 of the shorter edges,then twist into spirals. Place on 2 baking sheets.Cover and chill to firm, if needed. Bake 1 trayat a time for 12-15 minutes or until puffed andgolden. Transfer to a cooling rack – they willcrisp up further as they cool – and enjoy warmor cold.
