Start by making the aquafaba. I found that the liquid from a 400g can of chickpeas is enough to make enough whipped aquafaba for 3 of these Triple Sec Cocktails. Add the aquafaba to a bowl and mix it using a handheld mixer or a standing mixer with the whip attachment. Whip for about 6-10 minutes (time varies depending on your machine) until you see firm peaks forming. The consistency should be similar to whipped egg whites.
Step 2
In a cocktail glass, add the Triple Sec, the tomato water, fresh lemon juice and fresh orange juice. Add 3-4 spoonfuls of whipped aquafaba. Decorate with a fresh sprig of rosemary and serve immediately.
