Step 1
Preheat oven to 325 F. On a baking sheet evenly spread the flaked coconut and macadamia nuts. Bake for about 8 minutes or until coconut begins to brown. Toss half way through baking. Watch closely to prevent burning. Remove from oven and set aside.
Step 2
In a medium saucepan, bring the coconut milk to a boil. Reduce heat to medium. Add oats and cook about 5 minutes, stirring frequently, until softened and milk is absorbed. Remove from heat. Stir in maple syrup.
Step 3
Distribute evenly into two bowls. Top with desired amount of banana chips, and toasted coconut and macadamia nut mixture. Enjoy!
