Step 1
Place potato, tuna, cheddar, corn, parsley, onion and lemon rind in a large bowl. Season with salt and pepper. Stir to combine. Using damp hands, roll level tablespoons of mixture into balls. Place on a baking tray lined with baking paper.
Step 2
Preheat oven to 220°C/200°C fan-forced. Place flour on a large plate. Whisk egg and 1 tablespoon water in a shallow bowl. Place breadcrumbs on a large plate. One at a time, roll balls in flour, shaking off excess. Dip in egg, then coat in breadcrumbs. Return to prepared tray.
Step 3
Spray with oil. Bake for 15 minutes or until balls are golden and crisp. Serve or freeze until required (see notes).
