The time-honored Italian pairing of canned tuna and cannellini beans makes a super-simple, satisfying lunch. Serve over salad greens, on grilled whole-wheat country bread or tucked in a whole-wheat pita pocket.

Tuna & White Bean Salad

lemon juice

olive oil

garlic,

salt

pepper,

cannellini (white kidney) beans, rinsed

red onion

parsley

basil

tuna

Whisk lemon juice, oil, garlic, salt and pepper in a medium bowl. Add beans, tuna, onion, parsley and basil; toss to coat well.


I made this so I didn't have to turn on the stove on a hot day. It was just wonderful. I have tried to make a mayo free tuna with yogurt, but it just isn't great, ok it's just barely edible. The beans here add that creamy texture and something else (I don't how to explain it) of the mayo. I don''t use salt and the beans were no salt added and yet it had plenty of flavor. I'll definitely make this again this summer, suppose to be a hot one.

After you've combined all the ingredients, let the salad marinate 20-30 minutes before serving.  I added some roasted pine nuts and chopped mint leaves (instead of basil as I didn't have any), had it with some toasted bread, so very delightful.

While this salad was easy to make, I found it bland and "dry". Eating Well has far better salads you should try instead. We used tuna packed in water, so we'll use another fish and oil next time, I guess.

Absolutely loved this recipe! Didn't have any tuna so I used canned wild salmon and it tasted great! It' s light and the lemon makes it refreshing! Will make again!
