Step 1

• Adjust rack to middle position and preheat oven to 450 degrees. Wash and dry produce. • Peel and mince or grate garlic. • Heat a drizzle of olive oil in a large pan over medium high heat. Add half the garlic; cook, stirring, until fragrant, 30 seconds. • Stir in tomato paste and half the Italian Seasoning (all for 4 servings). Cook, stirring, until combined. • Add meatballs*, ½ tsp sugar, salt, pepper, and ½ cup water. (For 4, use 1 tsp sugar and 1 cup water.) • Meanwhile, in a medium bowl, toss mixed greens with Italian dressing until evenly coated. Season with salt and pepper to taste.

• Divide subs and salad between plates. Serve
