Preheat your oven to 425°F.

Wash and cut your potatoes into a small dice (around ¼” -½” cubes). You want these small so they cook faster.

Toss the potatoes in 1 Tbsp of olive oil and season with salt and pepper. Bake for 10 minutes, then remove from the oven and turn. Bake an additional 5-8 minutes or until they have crisped up.

Wash your peppers. Cut the onion and peppers into a small dice. Chop the shredded carrots into smaller pieces.

Heat 1 Tbsp of olive oil over medium high heat in a large skillet. Add the onion, peppers, and carrots to the skillet and cook for 3 minutes.

Add the sausage to the pan and brown.
Step 7
Crack 10 eggs into a bowl, add in ¼ cup milk and beat. The secret to perfect scrambled eggs is to beat them until frothy and no egg whites remain unincorporated.
Step 8
Heat a skillet over medium heat, spray with cooking spray, and cook your eggs until finished. Make sure not to over cook them as you will be reheating them in the microwave.
