Step 1
Prepare your eggs. Set aside but keep warm.
Step 2
Wilt spinach or chard in water, with ground turmeric, in a medium fry pan.
Step 3
Remove greens from pan and let drain on paper towel to remove excess moisture (if any).
Step 4
Place your wilted spinach greens in a shallow soup bowl.
Step 5
Slice avocado and arrange over greens.
Step 6
Layer eggs over greens.
Step 7
Dust with pink Himalayan salt.
Step 8
NB: Optionally you can roast a sweet potato and place the entire egg creation on top of half of the roasted sweet potato.
