1 Separate the turnips from their greens

Step 2

2 Rinse the greens well, then coarsely chop

Step 3

3 Peel the turnips, then coarsely chop as well

Step 4

4 Bring a large pot of water to a boil over medium-high heat

5 Add a generous pinch or two of salt

Step 6

6 Add the turnips and cook (uncovered) until soft, 15 to 20 minutes

Step 7

7 Add the greens and cook, stirring occasionally, until the turnips are quite soft and the greens are bright green and tender, about 3 minutes

Step 8

8 Drain, then return to the empty pot (off the heat)

Step 9

9 Add the heavy cream and butter, then use a potato masher to crush everything together

Step 10

10 Season lightly with salt, and serve hot
