Step 1
Heat 2 teaspoons of the olive oil in a large skillet over medium high heat.

Add the chicken breasts to the skillet.
Step 3
Season the chicken with the Italian seasoning, salt and pepper.
Step 4
Cook the chicken for 4 minutes on each side until the chicken reaches an internal temperature of 165 degrees F.

Remove the chicken from the pan and place them on a separate plate.
Step 6
Deglaze the hot skillet with water and scrape to remove any brown bites from the bottom of the pan.

Add the remaining oil to the skillet and heat over medium high heat.

Add in the diced onions and sauté for 2-3 minutes until the onions are soft.

Stir in the sun-dried tomatoes and garlic. Cook for 2 minutes.

Add in the spinach and cook just until the spinach starts to wilt.
Step 11
Stir in the heavy cream and grated parmesan cheese. Bring the mixture to a low simmer.
Step 12
Add the chicken back to the skillet and allow the mixture to simmer for approximately 5 minutes.

Remove the pan from the heat and then the chicken is ready to serve and enjoy!
