Step 1

Halve the baguette lengthwise and spread pesto on the cut sides. Add as much or as little pesto as you like. Next top it with spinach leaves, a few tomatoes, then the slices of cheese, sprinkle a few more tomatoes on top of the cheese and sprinkle a little bit of the shredded cheese.

Step 2

Place bread under a broiler on the high setting until cheese is melted and starting to brown and bubble. Remove from oven and cut into pieces, serve with lemon wedges.
