Step 1
Heat oven to 350 F. Lightly grease a 9x13-inch baking dish.
Step 2
In a large skillet heat olive oil over medium-high heat. Add the onion and bell pepper and saute for 4-5 minutes until softened. Remove to a large bowl.
Step 3
Add the bacon and sausage and cook until the mixture is browned and crispy. Drain the mixture to remove the fat.
Step 4
In the large bowl with the onion/bell pepper mixture add the eggs, hash browns, cheddar cheese, Jarlsberg cheese, cottage cheese and sour cream. Mix until well combined.
Step 5
Stir in the bacon/sausage mixture.
Step 6
Scoop the mixture into the baking dish and bake for 40 minutes until golden on top and the casserole is set. Let stand for 10 minutes before serving.
Step 7
Top the casserole with some chopped fresh chives.
