1 bunch flat-leaf parsley, leaves picked1 bunch each dill, chervil and French tarragon (substitute tarragon), sprigs picked1 loosely packed cup picked watercress sprigs1 loosely packed cup wild rocket leaves1 butter lettuce, leaves separated, torn1 tsp caster sugar2 eschalots, thinly sliced150 milliliters extra virgin olive oil50 milliliters chardonnay vinegar (substitute white wine vinegar)

Step 1

For the eschalot dressing, combine sugar, eschalot and a pinch of salt flakes, and stand for 10 minutes. Whisk in the oil and vinegar until well combined. Set aside.

Step 2

To make the herb salad, combine all ingredients in a large bowl and gently toss through dressing.
