Step 1

Preheat the oven to 350°F (180°C). Lightly oil and dust with flour a loaf pan. Set aside.

Step 2

Using a food processor, mash the bananas. Add the oat milk, the oil, the vanilla and the ground flaxseed. Whiz again until everything is fully combined.

Step 3

In a large bowl add the flour, sugar, oat, baking powder, baking soda and salt. Mix well. Add the banana mixture to the bowl and gently mix with a wooden spoon until everything well combined.

Step 4

If using nuts and dried fruit, add to the mixture and combine well.

Step 5

Transfer the mixture to the loaf pan. Add any desired toppings.Bake in the centre of the oven for 25-30 minutes or until golden brown on the outside. To check if it's ready, you can insert a skewer in the centre of the vegan banana bread. If it comes out clean, the vegan banana bread is ready.

Step 6

Leave it to cool in the loaf pan for about 10-15 minutes, then transfer the vegan banana bread on a cooling rack for another 30-60 minutes before slicing with a bread knife.
