Step 1
Add all the ingredients to a bowl. Whisk until combined and set aside.

Chop artichokes into medium sized pieces that resemble pieces of shredded pork (as pictured above). Set aside.

Heat a non-stick sauté pan to medium heat with olive oil. Add the diced onions and garlic. Cook for about 1-2 minutes or until the onions are translucent and the garlic is fragrant.
Step 4
Add artichokes and stir to combine with onions and garlic. Pour the sauce into the pan and stir until the sauce is incorporated.
Step 5
Turn the heat to medium-low. Cover and let cook for 20 minutes to get the sauce to caramelize and the artichokes to absorb most of the sauce.
Step 6
Stir once more, remove from heat, and assemble your sandwich on toasted buns and top with coleslaw (a must!).
