Step 1

Prepare the sushi rice according to the package instructions and let it cool.

Step 2

Add two tablespoons of rice vinegar and 1 tablespoon of sugar to a small bowl. Mix until the sugar dissolves and add to the cold sushi rice, involving to mix.

Step 3

Cut the cooked beet into cubes and add to a bowl.

Step 4

Mix three tablespoons of rice vinegar, two tablespoons of soy sauce, 1/4 teaspoon of salt, half a tablespoon of sugar or yellow sugar and some ground pepper.

Step 5

Add this marinade to the beet cubes, coat it well and let sit for an hour.

Step 6

With the rice cold and the beetroot already marinated, let’s prepare the bowls.

Step 7

Add half the rice to each bowl as well as half the beet on top.

Step 8

Cut half a cucumber, half a ripe mango and an avocado into thin slices, and add them to the bowls.

Step 9

Add a tablespoon of dried or fried onion to each bowl, as well as a tablespoon of roasted and spicy peanuts and a tablespoon of sesame seeds.

Step 10

Cut half a Nori sheet into thin strips to garnish.

Step 11

Add more soy sauce or sweet and sour sauce, if desired.
