Step 1
Boil potatoes for 15-20 minutes until soft and easy to penetrate with a fork
Step 2
Get water boiling for pasta. Once boiling, add pasta and cook for desired time
Step 3
While pasta and potatoes and boiling, cut broccoli into bite sized pieces
Step 4
On medium-low saute the broccoli and onion or shallot in tablespoon of oil
Step 5
Mash potatoes with the milk, salt, pepper and butter (if desired). Adjust anything to your liking
Step 6
Once mashed, mix in cheddar, cooked pasta and the broccoli/onion mixture
Step 7
Sprinkle vegan cheese on half of the tortillas
Step 8
Add mixture on top of cheese on each quesadilla
Step 9
Sprinkle more cheese on top of mixture
Step 10
Fold and cook until desired doneness
