Step 1

In a medium mixing bowl, combine Red Onion (1/2), Lemon (1), Olive Oil (2 tablespoon), Freshly Ground Black Pepper (1 teaspoon), and Salt (1 pinch).

Step 2

Add Vegan Chicken Strip (and toss to coat. Marinate for 15-30 mins to allow flavors to mix.

Step 3

In a large mixing bowl, combine Vegan Mayonnaise (1/4 cup), Dijon Mustard (1 teaspoon), Garlic Powder (1 teaspoon), Dried Thyme (1/2 teaspoon), Dried Dill Weed (1 tablespoon), Fresh Parsley (2 tablespoon) and Fresh Chives (2 tablespoon). Place in fridge until ready vegan chicken has marinated.

Step 4

Remove both mixtures from the fridge and add marinated chicken pieces and Celery (1 stalk) to the herbed mayo mixture, and mix to coat.

Step 5

Place Boston Lettuce (1 head), Tomato (1), and Cucumber (onto each Hoagie Roll (4).

Step 6

Spoon vegan chicken mixture onto each dressed bun and slice in half and serve, or wrap in eco-friendly sandwich wrap for a delicious school or work lunch.
