This chickpea salad recipe is light, delicious, and healthy. It's flavored with lemon, olive oil, and parsley for a Mediterranean vibe.

Vegan Chickpea Salad Sandwiches + Picnic Tips

Tablespoons red bell pepper, finely chopped

lemon juice

Tablespoons parsley, finely chopped

scallions, sliced thin

In a large bowl, mash chickpeas using a fork or a potato ricer. Mash thoroughly, but leave the consistency chunky. We're not going for hummus, here!

Add all other ingredients and stir to combine, mixing well.

Serve on your favorite sandwich bread, on crackers, or on baguette slices!

So delicious! I made this and even those who aren’t vegan said it was great! Can wait to share at the next office party!

I have an issue. I realize it may be considered more of a pet peeve, but - well - some of us are kinda serious about calorie counts. I also realize that (most, probably) people consider recipes to be vague suggestions rather than anything so tiresome as rules. But, in my considered opinion, if somebody is gonna go to the trouble of including nutritional information with a recipe, why on earth would there be any question at all about the serving size that will get you those nutritional numbers? Serves 3-4? Does that calorie count then apply to 1/3 of the recipe, to 1/4 of the recipe, or perhaps, in the interest of fairness, to 1/3  (plus half of whatever it takes to even it out - I really don't get along well with numbers!)? That's on the same page as a recipe that tells you to finely chop half of a large onion. How big is large? Is it 6" diameter, 3" diameter, or the biggest one in the produce aisle? The biggest one in my pantry? Yeah, I really do get that (like the ubiquitous salt and pepper - or hot sauce) most cooking winds up, in the long run, as "to taste". But, especially when it involves the number of people who can expect to feel physically - or tastefully - satisfied by consuming something, it does make a difference. It might make more sense to indicate that a serving is 1/2 cup, or that the chopped onion is in the neighborhood of 3/4 cup.

By the way, except for the 1/8 teaspoon of cayenne, I thought it was pretty good. Since I'm not usually on good terms with "too spicy" (which is barely noticeable to 2 of my 3 sons), I tend to leave cayenne to a brief wave rather than anything that can be measured with a spoon. Then again, I recognize my spice limitations, and season - ha! - to taste. Thanks for the recipe!
