Step 1
Heat the oil in a skillet over medium heat. Add 1/2 of the onion and cook down for 2 minutes. Pour in the beef crumbles, dry seasonings and chipotles. Cook for a couple of minutes - you want the beef crumbles to get a little char. Pour in 1/3 cup of water and lower the heat. Simmer for 10 minutes, stirring frequently.
Step 2
Meanwhile, add the remaining onions to a bowl with 1/2 of the cilantro and the juice of 1 lime. Mix until combined and set aside.
Step 3
Add the remaining lime juice & cilantro to the vegan beef, toss and taste. Adjust the seasonings as needed.
Step 4
Heat the tortillas (over an open flame or in a skillet). To assemble, layer each tortilla with vegan beef crumbles, a spoonful of onions & cilantro and a dollop of guacamole. Serve with lime wedges on the side.
