Step 1

Combine coconut milk, sugar, vanilla, and salt in a small sauce pan over medium-high heat.  Whisk to combine and then bring to a boil.

Step 2

Reduce the heat and simmer on low for 30 to 35 minutes, stirring every 5-10 minutes. It will thicken once cooled.

Step 3

remove from heat after 30 minutes. Quickly whisk in 1/4 tsp xanthan gum and then let it cool.
