First, toast bread slices and set aside.

Prepare the strawberry sauce by placing the strawberries in a saucepan, along with maple syrup, lemon juice, lemon zest, and vanilla.

Bring to boil over medium heat, crush some of the strawberries to thicken the sauce, then reduce to simmer for about 3 minutes. Turn off heat and set aside.

Blend almond milk, banana, cornstarch, vanilla, and salt, and pour the batter into a shallow dish.
