For roasted garlic Honey Dijon dressing:Preheat the oven to 400ºF.Smash 3 garlic cloves gently. Roast them (skin on) with the lemon and 400ºF for about 20 minutes, or until the garlic is softened.Squeeze 2 garlic cloves from the skins, and the juice from one-half of the lemon, into a small bowl. Mash the garlic until smooth.Add the tahini, maple syrup, mustard, and water. Mix well to combine. Add salt and pepper, more lemon juice, roasted garlic, maple syrup, and water to taste.

Step 2

For raw garlic Honey Dijon Dressing:Add 1 clove minced garlic, 1 ½ tablespoons lemon juice, tahini, maple syrup, mustard, and water to a medium bowl. Mix well to combine. Add salt and pepper, more lemon juice, maple syrup, and water to taste.
