Vegan Kale Salad with Almond Butter Dressing

Ingredients

Remove All · Remove Spices · Remove Staples

5 oz package of baby kale (or spinach if preferred)1 15 oz can organic white northern beans, drained and rinsed1 heaping cup (160 grams) baby carrots, shredded or grated3 tablespoons (48 grams) roasted creamy almond butter1 1/2 tablespoons (23 grams) fresh lemon juice2 teaspoons (13 grams) pure maple syrup1/4 teaspoon garlic powder1/8 teaspoon ground black pepper3 tablespoons water, depending on how thick you want it. I use 6 so that it's very pourable1/4 teaspoon fine salt, to desired taste (this will vary depending on if your almond butter is salted

Step 1

In a large bowl, add all of the prepared salad ingredients and toss well.

Step 2

In a cup, add the dressing ingredients and whisk well with a fork or small whisk until completely smooth. Taste and add any more salt if desired. Drizzle as much as desired over salad.
