Add all pumpkin spice syrup ingredients into a nonstick saucepan and heat them on low/medium heat. Stir regularly until most of the water has evaporated and the mixture has become thick and sticky.

Step 2

Run the syrup through a small sieve to filter out any spices and store in an airtight container in the fridge for up to 7 days. Add about 1 tablespoon of the syrup to your desired pumpkin spice drink.

Step 3

To assemble your vegan pumpkin spice latte, add 1 tbsp of the syrup, 1 shot of espresso (or 2 if it's a Monday), and frothed plant milk. If you're feeling fancy, top with cream, sprinkles, and more syrup.
