Step 1
Blend the strawberries. Add 1 and 1/2 cup of strawberries, milk, yogurt, maple syrup, lemon juice, and vanilla extract to a high-speed blender. Blend on high for 10-15 seconds or until smooth.

Combine with the oats. Transfer the blended strawberries to a large mixing bowl and add the oats. Stir until fully combined. At this point, taste and adjust the sweetness to your liking.
Step 3
Stir in the chopped strawberries. Next, dice the remaining 1/2 cup of strawberries and incorporate them evenly into the mixture.
Step 4
Chill overnight. Finally, you can either transfer the oats to individual glass jars or simply keep them in the mixing bowl. Cover with plastic wrap and chill overnight in the refrigerator. The oats will absorb the liquid and thicken as they sit.
Step 5
These overnight oats can be stored in the refrigerator for up to 5 days.
