Step 1
Heat oil in a large pot.
Step 2
Add onion garlic, and salt, saute until onion is soft.
Step 3
Add coriander, cumin, turmeric, and cinnamon.
Step 4
Add potatoes, carrots, red pepper, tomato sauce and water, stir well.
Step 5
Bring to a boil, lower heat and simmer, covered, until potatoes and carrots are tender, about 20 minutes.
Step 6
Add broccoli and cooked chickpeas and stir in gently.
Step 7
Cover and simmer until broccoli is bright green and tender – a few minutes.
Step 8
Serve over rice and garnish with cilantro.
