Step 1
In a large skillet over medium heat. Add olive oil, onion, carrots, peas, garlic powder, ground ginger, salt and 2 Tablespoons soy sauce. Cook for 3-4 minutes.
Step 2
Push all veggies to one side of the skillet. Add 3 eggs to the open side of the skillet. Scramble eggs and cook for 3-4 minutes. Stir scrambled eggs into veggies.
Step 3
Add cooked rice, remaining soy sauce, and butter.
Step 4
Stir fry for 1 minute. Remove from heat and serve immediately.
