Step 1

Grate or finely chop the vegetables - courgette, parsnip, carrot, pumpkin, potato, broccoli, beans, peas, spinach etc – and place in a large bowl. Add in the flour, salt, eggs and whatever herbs, cheese and spices you’re using (see below for some suggestions).

Step 2

Heat half the oil in a large frying pan and cook ¼ cupfuls of mixture until golden brown on both sides and cooked through.

Step 3

Serve with chutney and salad.
