Step 1

Boil brown rice according to instructions on the package.

Step 2

Peel and cut the carrot.

Step 3

Wash and cut the spinach into even pieces.

Step 4

Wash and slice the red bell pepper.

Step 5

Finely chop the garlic and ginger.

Step 6

Add garam masala, garlic, ginger and tomato paste and sauté for a minute.

Step 7

Add coconut milk and stock and mix, and let simmer for 5 more minutes.

Step 8

Blend the sauce with an immersion blender.

Step 9

Stir in yogurt and mix well.

Step 10

Add carrot, red bell pepper and spinach and let simmer for 15 minutes, or until the vegetables are tender.

Step 11

Add salt to taste.

Step 12

Serve with brown rice on the side.
