Step 1

Heat oil in large non-stick frying pan over medium-high heat. Add mushrooms to pan and stir-fry for 1 minute. Add garlic and stir-fry for 2-3 minutes until mushrooms are softened and lightly golden.

Step 2

Add tofu and rice. Cook, stirring for 1 minute. Add spinach and cook for 1 minute or until wilted. Add shallots and soy sauce. Toss to combine.

Step 3

Divide mushroom mixture between lettuce leaves to serve.
