Step 1

Heat a nonstick frying pan on high heat. Cut your halloumi cheese into 3/8-inch slices and gently blot dry with a paper towel. Brush each piece very lightly with olive oil.Place each slice of halloumi in the pan once it's hot. Fry for 1-2 minutes per side, until golden brown and cooked to your liking. Add several grinds of black pepper.

Step 2

Take two slices of thick, fresh white bread. (Toast them if you want some extra crunch!) Spread one slice with a generous helping of tzatziki sauce. Top with several thin slices of cucumber.

Step 3

Add more black pepper. Top with the fried halloumi cheese. Close the sandwich, cut it in half, and enjoy!
