Step 1
Preheat the oven to 375 degrees. Coat a 13×9 baking dish with cooking spray.
Step 2
In a large skillet, heat oil to medium. Add spinach, bell peppers and broccoli and cook 3-4 minutes, stirring frequently, until slightly soft. Turn off the heat.

In a large mixing bowl, whisk together eggs, yogurt, Italian seasoning, salt, onion powder, garlic powder, dry mustard and black pepper. Fold in the cooked vegetables.
Step 4
Transfer the mixture to the prepared baking dish and top with shredded cheese. Bake 35-40 minutes or until egg is set.
Step 5
Let cool, then slice into 8 pieces.
