Step 1

Preheat oven to 375 F.

Step 2

Heat the oil in a large pan over medium heat and add the onion, thyme and maple syrup. Sauté until caramelized, 15 to 20 minutes (or longer… don’t rush this).

Step 3

Combine the mayonnaise, cream cheese, sour cream, 1½ cups grated cheddar, the hot sauce and garlic powder in a medium bowl. Stir together with a wooden spoon, smashing the mixture against the side of the bowl to break up the cream cheese. Add the warm onions and stir to combine. Season with salt to taste.

Step 4

Transfer the dip to a pie dish or a small casserole dish. Top with the remaining cheese. Bake for 20 to 25 minutes. Crumble the bacon and sprinkle on top. Serve hot with potato chips.
