1 In a large bowl, combine the shrimp with the oyster sauce, salt, cayenne pepper and flour

2 Set aside to marinate for 5 to 10 minutes

3 In a large skillet or wok over medium heat, heat the oil until shimmering

4 Add the garlic and cook until golden brown, about 1 minute

5 Transfer the shrimp to the skillet or wok, discarding any marinade

6 Cook the shrimp, stirring occasionally, until they begin to curl and turn pink

7 Add the water and sugar and simmer for 3 minutes

8 Add the onion and cook, stirring constantly, for 2 minutes

9 Add the chili pepper and black pepper to taste

10 Squeeze the lime juice over the top of the shrimp and transfer the mixture to a platter
