Step 1
Boil the eggs and add them to an ice water bath to cool down completely. Once they are cold you can peel them and set them aside.
Step 2
Slice any favourite bread of choice and put a little bit of mayo on each one. In a hot pan place the slices of bread mayo side down and let them crisp up.
Step 3
Once they are nice and sizzly you can remove them off the heat. In a separate bowl mix the avocado, touch of salt and lemon juice. You are more than welcome to use hot honey if you love it on avocado.
Step 4
Spread the avocado mash onto the toast and gently grate the eggs on top. Add some pepper or hot sauce to taste and enjoy.
